– 1 cup (2 sticks) unsalted cold butter cut into small cubes.
– 1 cup packed light brown sugar
– ½ cup granulated white sugar
– 2 large eggs
– ½ cup dark unsweetened cocoa
– 1 cup cake flour
– 1 ½ cup all-purpose flour
– 1 tsp cornstarch
– ¾ tsp baking soda
– ½ tsp salt
– 1 cup roughly chopped semi-sweet chocolate chunks.
– 1/2 cup semisweet chocolate chips

– Preheat oven to 410F. Prepare large baking sheet with parchment paper.
– Mix all the dry ingredients. Set aside.
– Using a stand mixer, mix the brown and granulated sugar.
– Add eggs to the sugar mix until incorporated.

– Add dry ingredients until fully incorporated. Do not over mix.
– Add chocolate chunks. Do not over mix.

– Chill dough for 20 minutes.
– Using a scale, make 120g dough balls. Add chocolate chips on top until it weighs 127g.
– Bake for 10 minutes or until top is set.
– Let the cookies cool on baking sheet for 20 minutes.
– Sprinkle with powdered sugar.
